Potluck


Do you have a favourite potluck dish?  At work we have an annual potluck for the holidays.  I know they’re not everybody’s favourite, but I like them, probably because I enjoy cooking.  The only problem is we don’t have access to an oven at work and if possible I like to avoid the cues for the microwave leading up to the party.  That means the options can be pretty limited.  So what can I bring that’s easy to commute with on the train and something a little more exciting then dip?

  1. I'd take a curried chicken salad and small dinner rolls to serve with the salad. A taco salad is another possibility. Not very original, but possible. The hard part of your request is the train. I know you'll come up with something. Have a great day. Blessings...Mary

  2. I would try something like small baguette slices with goat cheese (bread could be crispy or soft). Or maybe bacon wrapped dates? They can be served at room temperature and they are delish! Just stuff the dates with a strong cheese or nut then wrap in bacon, cook at 450, turning frequently until they look crispy.

  3. For pure easy transportation, tortilla roll-ups are always a good bet. Usually they are just cream cheese spread on a tortilla, rolled up and then cut into bite size pieces. However, I usually use cream cheese (any flavour will do) and then add things like pesto, or black forest ham, or if you use smoked salmon cream cheese add some capers and dill weed. You can make any type of combination you want - just use your imagination when it comes to the filling. They are easy to make, easy to store (wrap them up and put them in the fridge until you are ready to cut them into bite size pieces)and really easy to take to a potluck. Let me know if you need more ideas for the filling.

  5. your potato salad is always a hit! (it's vicky) have you ever made deviled eggs? i usually make a bean salad for potlucks... different depending on what i have around. good luck and let us know what you decided :)

  6. as a continuation of Jen's comment. I ALWAYS ALWAYS make "antijito" thingies.

    flour tortilla
    creamed cheese
    chopped jalapeno

    Spread the cc on the tortilla, sprinkle on the jals and you got a spicy party in your mouth!
