Perfect Chocolate Chip Cookies

What a great way to start the weekend! Crunchy edges and soft centres, make this the perfect chocolate chip cookie. I asked my mom if I could borrow her electric mixer for this recipe. It's just one of those things I don't use since I don't bake much. As I was using it I felt very nostalgic, remembering my mom making lots of meringues and cheese muffins with that mixer. Recipe by Jim Lahey found in Bon Appetit Magazine. Ingredients: 1 Cup plus 2 Tbsp. of all-purpose flour 3/4 Tsp of kosher salt 1/2 Tsp of baking powder 3/4 Cup (1 1/2 sticks) of unsalted butter, room temperature 3/4 Cup (packed) light brown sugar 1/4 Cup of sugar 1 Large egg, room temperature 1/2 Tsp of vanilla extract 1 Cup of semisweet or bittersweet chocolate chips Makes about 20 cookies Arrange racks in upper and lower thirds of oven; preheat to 425F. Here I am!

Okay so I’ve been pretty bad about updating this thing. It’s just that I want to be outside once I’m finished work every chance I get now that the weather is so nice. I’m sure you feel the same. We’ve just been hanging out in our backyard having BBQ’s and gardening. We also built a huge vegetable box to hopefully prevent the rabbits and possums (do possums eat vegetables?) getting at them. I’ll post photos of that soon. Every morning before work I check on their progress and again as soon as I’m back. I can’t believe how fast those seeds have grown! We started growing a few plants inside the house from seeds about 3 months ago, but not everything lasted once it was time to introduce them to the outside. Only a few tomato plants have made it so far, but the peppers are thriving! So we bought a few more tomato plants to replace the ones that didn’t make and planted a bunch of seeds for beans, zucchini, beets, radishes and all sorts of herbs. It’s a New Year!

Happy New Year you guys! I can’t believe it’s 2011, blah, blah, blah, I know. But really this year has just flown! I remember thinking how I would be getting so close to my due date come this time and now here we are. It blows my mind to think I have only two months left. Phil and I have the baby’s room pretty much ready. We put together the crib over the holidays and I won’t lie I go in there at least twice a day to look around and think how we’ll have a real live baby in there! I’m holding off on buying every sweet baby thing I see. Okay that’s it I promise this won’t turn into a baby blog. Just a few baby updates are okay – right?
