Perfect Chocolate Chip Cookies

What a great way to start the weekend! Crunchy edges and soft centres, make this the perfect chocolate chip cookie. I asked my mom if I could borrow her electric mixer for this recipe. It's just one of those things I don't use since I don't bake much. As I was using it I felt very nostalgic, remembering my mom making lots of meringues and cheese muffins with that mixer. Recipe by Jim Lahey found in Bon Appetit Magazine. Ingredients: 1 Cup plus 2 Tbsp. of all-purpose flour 3/4 Tsp of kosher salt 1/2 Tsp of baking powder 3/4 Cup (1 1/2 sticks) of unsalted butter, room temperature 3/4 Cup (packed) light brown sugar 1/4 Cup of sugar 1 Large egg, room temperature 1/2 Tsp of vanilla extract 1 Cup of semisweet or bittersweet chocolate chips Makes about 20 cookies Arrange racks in upper and lower thirds of oven; preheat to 425F. It’s a New Year!

Happy New Year you guys! I can’t believe it’s 2011, blah, blah, blah, I know. But really this year has just flown! I remember thinking how I would be getting so close to my due date come this time and now here we are. It blows my mind to think I have only two months left. Phil and I have the baby’s room pretty much ready. We put together the crib over the holidays and I won’t lie I go in there at least twice a day to look around and think how we’ll have a real live baby in there! I’m holding off on buying every sweet baby thing I see. Okay that’s it I promise this won’t turn into a baby blog. Just a few baby updates are okay – right?

Wedding Cakes

Remember when wedding cakes were always fruit cake? I don’t. I was just told that’s how it used to be. You’re old… JUSTKIDDING! Nowadays you can get butter cream, poppy seed lemon, white chocolate, orange almond, marble… well, you get the idea. Phil and I are tying the knot in July and need to find a wedding cake. How do you choose?? I have a friend who was married in November and she said the first thing she did when she got engaged was sample cakes. Smart girl. I on the other hand was under the impression a good family friend was making ours, but unfortunately she won’t be in the country in July. I really loved the idea of the cake being made by somebody we knew and wasn’t too fussed about what it looked like (though I know it would have been amazing). Now where to start? I've decided on the cake topper, but no cake. I think if we were getting married in the city it would be easy to find a bakery I’m familiar with, but we’re getting married near Niagara-on-the-Lake.
